Here’s a bright green soup, packed with seasonal vegetables, that will delight and warm the hearts of food lovers of all ages. The proportions and selection of vegetables can vary according to taste, but they must be green. You can also make some garlic croutons to serve with this comforting dish. Steps

Start by sautéing the onions and crushed garlic cloves in a little bit of olive oil.

Wash and chop all the vegetables. Add them to the pot and let them brown slightly.

Season with salt and add enough water to cover the vegetables.

Cook until the potatoes are tender, then stir in a small handful of parsley leaves.

Blend the soup, season with pepper, and add a splash of soy cream to make it creamy.
